  • 2 sheets Vegan puff pastry sheets
  • 4 medium Fresh peaches
  • 60 grams Almond meal
  • 50 grams Granulated sugar
  • 30 grams Vegan butter
  • 1 teaspoon Almond extract
  • 1 tablespoon Lemon juice
  • 15 grams Powdered sugar
  • 20 grams Slivered almonds

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the vegan puff pastry sheets as per the package instructions until pliable but still cold.

Step 3

Slice the fresh peaches into thin wedges, removing the pits.

Step 4

In a small bowl, mix the almond meal with the granulated sugar.

Add the vegan butter and almond extract to the almond meal mixture and mix until combined. This will create an almond paste.
