Ingredients

  • 4 pieces medium potatoes

  • 400 grams canned chopped tomatoes
  • 1 medium onion
  • 3 pieces garlic cloves
  • 1 tablespoon red wine vinegar
  • 15 grams fresh parsley
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 220°C (430°F).

Step 2

Peel and cut the potatoes into 2 cm (about 0.8 inch) cubes.

Step 3

Toss the potatoes in a bowl with 3 tablespoons of olive oil and 1 teaspoon of salt.

Step 4

Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

Bake the potatoes in the preheated oven for 25-30 minutes until crispy and golden brown, flipping halfway through.
