Ingredients

  • 2 sheets vegan puff pastry sheets
  • 400 ml coconut milk
  • 200 ml almond milk
  • 50 g cornstarch
  • 150 g caster sugar
  • 1 tsp vanilla extract
  • 0.5 tsp turmeric
  • 1 tsp lemon zest
  • 1 pinch sea salt

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

Roll out one vegan puff pastry sheet on a lightly floured surface until it's thin and even.

Step 3

Using a round cookie cutter, cut circles from the pastry sheet. Gently press these circles into the cups of a muffin tin. Repeat with the second sheet of pastry.

Place the coconut milk, almond milk, and cornstarch in a medium-sized saucepan and whisk until the cornstarch is fully dissolved.

Add caster sugar, vanilla extract, turmeric, lemon zest, and a pinch of sea salt to the milk mixture.
