Ingredients

  • 150 g cake flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 100 g organic sugar
  • 200 ml coconut milk
  • 60 ml vegetable oil
  • 60 ml pandan juice (from freshly blended pandan leaves)
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 0.5 tsp matcha powder (for coloring, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 7-inch round cake pan and line the bottom with parchment paper.

Step 2

In a large mixing bowl, sift together the cake flour, baking powder, baking soda, and salt. Add the sugar and whisk to combine.

Step 3

In a separate bowl, combine the coconut milk, vegetable oil, pandan juice, apple cider vinegar, and vanilla extract. Whisk until the mixture is smooth.

Step 4
