  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 large carrot, julienned
  • 1 medium red bell pepper, sliced
  • 100 grams green beans, trimmed and halved
  • 100 grams cabbage, shredded
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetarian oyster sauce
  • 1 cup vegetable broth
  • 200 grams tofu, firm and cubed
  • 2 stalks green onions, chopped
  • 2 for garnish lime wedges

Directions

Step 1

Bring a large pot of water to boil and cook the dried canton noodles for about 3-4 minutes or until al dente. Drain and set aside.

Step 2

Heat one tablespoon of sesame oil in a large pan over medium heat. Add the cubed tofu and fry until golden brown on all sides. Remove tofu and set aside.

In the same pan, add the remaining sesame oil and sauté the minced garlic and sliced onion until fragrant and translucent.

Add the julienned carrot, sliced red bell pepper, green beans, and cabbage to the pan. Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.

Step 5

Stir in the cooked canton noodles, soy sauce, vegetarian oyster sauce, and vegetable broth. Toss everything together until the noodles are well coated and heated through.

Step 6

Add the fried tofu back to the pan and mix gently.

Step 7

Transfer the Pancit Canton to a serving platter and sprinkle with chopped green onions.

Step 8

Serve with lime wedges on the side for a citrusy kick. Enjoy your Vegan Pancit Canton!
