Ingredients

  • 3 cups Whole wheat flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Organic brown sugar
  • 0.75 cup Molasses
  • 0.25 cup Coconut oil (melted)
  • 0.5 cup Oat milk (or any plant-based milk)
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt until well combined.

Step 3

In another bowl, mix the unsweetened applesauce, brown sugar, molasses, melted coconut oil, oat milk, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients gradually, stirring until a firm dough forms. If the dough is too sticky, add a little more flour, or if it's too dry, add a bit more plant-based milk.

Step 5

Lightly flour a clean surface and roll the dough to about 1/4 inch thickness.

Step 6

Use a pig-shaped cookie cutter to cut out the marranitos and place them on the prepared baking sheet.

Step 7

Bake for 12 to 15 minutes, or until the edges are lightly browned and the cookies are set.

Step 8

Allow the marranitos to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or store in an airtight container at room temperature for up to a week.
