Ingredients

  • 14 ounces extra-firm tofu
  • 2 tablespoons vegetable oil
  • 4 garlic cloves, minced
  • 2 fresh Thai chilies, sliced
  • 1 yellow onion, sliced
  • 1 red bell pepper, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon maple syrup
  • 2 tablespoons vegetable broth
  • 2 cups fresh Thai basil leaves
  • 4 lime wedges (for serving)
  • 4 cups cooked jasmine rice (for serving)

Directions

Step 1

Begin by pressing the tofu to remove excess water. Place it between paper towels and press with a heavy object for about 15 minutes.

Step 2

Once pressed, cut the tofu into small cubes or crumble it into rough, bite-sized pieces.

Step 3

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Step 4

Add the minced garlic and sliced Thai chilies to the pan and sauté for about 30 seconds until fragrant.

Step 5

Add the onion and red bell pepper slices to the pan, and cook for 3-4 minutes until they start to soften.

Step 6

Increase the heat to high, then add the tofu pieces to the pan.

Step 7

Stir-fry for 4-5 minutes until the tofu is golden brown and edges are crispy.

Step 8

In a small bowl, mix the soy sauce, dark soy sauce, maple syrup, and vegetable broth.

Step 9

Pour the sauce mixture over the tofu and vegetables, stirring well to combine all the ingredients.

Step 10

Turn off the heat and stir in the fresh Thai basil leaves gently, allowing them to wilt slightly in the residual heat.

Step 11

Serve the Vegan Pad Krapow immediately over cooked jasmine rice, with lime wedges on the side for an added burst of freshness.
