Ingredients

  • 400 g Firm tofu
  • 4 Garlic cloves
  • 2 Red bird's eye chili
  • 2 tbsp Vegetable oil
  • 3 tbsp Soy sauce
  • 2 tbsp Vegan oyster sauce
  • 1 tbsp Coconut sugar
  • 1 cup Fresh Thai basil leaves
  • 1 Red bell pepper
  • 2 Shallots
  • 3 cups Cooked jasmine rice
  • 1 Lime wedges

Directions

Step 1

Press the tofu to remove excess moisture. Once pressed, cut the tofu into small cubes.

Step 2

Peel and finely chop the garlic cloves. Slice the red bird's eye chilies thinly. Set aside.

Step 3

Slice the red bell pepper into thin strips and chop the shallots.

Step 4

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and chilies and stir-fry for about 30 seconds until fragrant.

Step 5

Add the chopped shallots and bell pepper to the skillet and stir-fry for another 2-3 minutes until they start to soften.

Increase the heat to high and add the tofu cubes to the skillet. Stir-fry for about 5 minutes until the tofu is golden brown.
