Ingredients

  • 200 g all-purpose flour
  • 2 tablespoons vegetable oil
  • 100 ml water
  • 1 teaspoon salt
  • 3 medium onions
  • 2 green chili
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon garam masala
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons water
  • 500 ml vegetable oil

Directions

Step 1

In a mixing bowl, combine the flour, 2 tablespoons of vegetable oil, and 1/2 teaspoon of salt. Gradually add 100 ml of water and knead into a firm dough. Cover with a damp cloth and set aside for 15 minutes.

Step 2

Peel and thinly slice the onions. Chop the green chilies finely.

Step 3

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Step 4

Add the sliced onions and green chilies to the pan. Saute until the onions turn translucent.

Step 5

Mix in the coriander powder, turmeric powder, red chili powder, garam masala, and the remaining 1/2 teaspoon of salt. Cook for another 2-3 minutes.

Step 6

Turn off the heat, add the lemon juice, and chopped cilantro. Stir well and let the filling mixture cool completely.

Step 7

Divide the dough into 6 equal parts. Roll each part into a ball, and then roll out each ball into a thin oval shape.

Step 8

Cut each oval into half to form a semi-circle. Take one half, moisten the straight edge with water, and fold it into a cone shape. Press the edges lightly to seal.

Step 9

Fill the cone with about 1 tablespoon of the onion mixture. Moisten the open edges and press together to seal completely. Repeat with remaining dough and filling.

Step 10

In a deep pan, heat 500 ml of vegetable oil over medium heat. Gently slide the samosas into the hot oil and fry in batches, turning frequently until golden brown and crisp.

Step 11

Remove the fried samosas and drain on paper towels. Serve hot with chutney or your favorite dip.
