Ingredients

  • 100 g Rolled oats
  • 125 g All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Salt
  • 60 ml Coconut oil, melted
  • 60 ml Maple syrup
  • 1 tsp Vanilla extract
  • 120 ml Unsweetened almond milk
  • 50 g Vegan chocolate chips (optional)
  • 30 g Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, ground cinnamon, and salt. Stir to combine the dry ingredients.

Step 3

In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.

Pour the wet mixture into the dry ingredients and gently stir to combine.

Gradually add the almond milk to the mixture, stirring until a thick but moist batter forms. If using, fold in the vegan chocolate chips and chopped walnuts.
