Ingredients

  • 4 slices whole grain bread
  • 2 tablespoons raw sunflower seeds
  • 2 tablespoons raw pumpkin seeds
  • 2 tablespoons raw almonds
  • 2 ripe avocados
  • 8 cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • 1 lemon
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven or toaster oven to 350°F (175°C).

Step 2

Place the sunflower seeds, pumpkin seeds, and almonds on a baking sheet. Toast them in the oven for about 5 minutes or until they are lightly golden and fragrant. Be careful not to burn them.

Step 3

While the seeds and nuts are toasting, cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth. Add the juice of half a lemon, sea salt, and black pepper. Mix to combine.
