Ingredients

  • 1 cup Textured Vegetable Protein (TVP)
  • 1 cup Hot vegetable broth
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.25 cup Nutritional yeast
  • 0.5 cup All-purpose flour (or gluten-free flour blend)
  • 0.5 cup Breadcrumbs (or gluten-free breadcrumbs)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Tomato paste
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for cooking)

Directions

Step 1

In a medium-sized bowl, combine the TVP and hot vegetable broth. Stir well, cover, and let it sit for 5-7 minutes, or until the TVP has absorbed the liquid and softened.

Step 2

In a frying pan over medium heat, sauté the finely chopped onion in 1 tablespoon of olive oil for about 3-4 minutes, or until translucent. Add the minced garlic and cook for an additional minute.

Step 3

Transfer the hydrated TVP to a large mixing bowl. Add the sautéed onion and garlic, nutritional yeast, flour, breadcrumbs, soy sauce, tomato paste, smoked paprika, ground cumin, salt, and black pepper.

Step 4

Mix the ingredients together thoroughly until a thick, moldable mixture forms. If the mixture is too dry, add a small splash of water or vegetable broth; if too wet, add more breadcrumbs.

Step 5

Divide the mixture into 4 equal portions and shape each portion into a burger patty.

Step 6

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.

Step 7

Serve the veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, or vegan mayo.
