Ingredients

  • 1 cup All-purpose flour
  • 1.5 cups Almond milk (or any plant-based milk)

  • 2 tablespoons Water
  • 1 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Vegan Nutella
  • 2 tablespoons Coconut oil (for cooking)
  • 2 whole Bananas (optional, for filling)
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

In a small bowl, combine the ground flaxseed and water, stirring to create a flaxseed mixture. Let it sit for about 5 minutes to thicken.

Step 2

In a large mixing bowl, whisk together the flour and salt. Gradually add in the almond milk while whisking, to create a smooth batter.

Step 3

Add the maple syrup, vanilla extract, and the prepared flaxseed mixture to the batter, whisking until fully combined.

Step 4

Heat a non-stick skillet over medium heat and lightly coat it with coconut oil.

Step 5

Pour about 1/4 cup of batter into the skillet, tilting the pan in a circular motion to spread it evenly.

Step 6

Cook the crepe for about 2 minutes or until the edges start to lift and the bottom is golden brown. Flip and cook for another 1 to 2 minutes on the other side.

Remove the crepe and repeat the cooking process with the remaining batter, adding more coconut oil to the skillet as needed.
