Ingredients

  • 300 grams all-purpose flour
  • 1 teaspoon baking powder
  • 100 grams cane sugar
  • 200 grams vegan butter
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 200 grams apricot jam
  • 200 grams vegan butter (for nut topping)
  • 200 grams cane sugar (for nut topping)
  • 6 tablespoons water (for nut topping)
  • 1 teaspoon vanilla extract
  • 400 grams chopped nuts (mixture of almonds, hazelnuts, etc.)
  • 200 grams dark chocolate

Directions

Step 1

Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes to create a flax egg.

Step 3

In a large bowl, combine the flour, baking powder, and cane sugar. Add the vegan butter and flax egg to the dry ingredients and knead into a smooth dough.

Roll out the dough on the prepared baking sheet to form a rectangle approximately 30x40 cm.

Spread the apricot jam evenly over the dough base.

For the nut topping, melt the vegan butter in a saucepan over low heat. Add the sugar, 6 tablespoons of water, and vanilla extract. Stir until the sugar is dissolved and the mixture becomes syrupy.

Add the chopped nuts to the saucepan and mix well until all the nuts are coated.

Spread the nut mixture evenly over the jam-covered dough.

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.

Once cooled, cut the large rectangle into squares, then cut each square into triangles to form 'corners'.
