Ingredients

  • 250 grams All-purpose flour
  • 50 grams Chickpea flour
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Salt
  • 0.5 teaspoon Turmeric
  • 200 milliliters Unsweetened almond milk
  • 100 milliliters Water
  • 1 tablespoon Olive oil

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, chickpea flour, nutritional yeast, salt, and turmeric. Stir well to evenly distribute the dry ingredients.

Step 2

In a separate bowl, whisk together the almond milk, water, and olive oil until the mixture is smooth.

Step 3

Make a well in the center of the dry ingredients and gradually pour in the wet ingredients while stirring with a wooden spoon. Mix until a thick batter forms; the batter should be smooth and slightly elastic.

Step 4

Bring a large pot of salted water to a boil.

Step 5

Using a nokedli maker or a colander with large holes, press small portions of the batter through into the boiling water to form the dumplings.

Step 6

Cook the dumplings for approximately 3 to 5 minutes or until they float to the surface and become firm. Stir occasionally to prevent sticking.

Step 7

Using a slotted spoon, transfer the cooked dumplings to a bowl.

Step 8

Serve the vegan nokedli warm as a side to your favorite vegan dishes or with a sprinkle of fresh parsley for garnish.
