  • 1 cup Raw cashews
  • 1.25 cups Water
  • 2 tablespoons Lemon juice
  • 1 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 can Black beans
  • 2 small Tomatoes
  • 1 medium Avocado
  • 0.25 cup Cilantro (optional)
  • 1 sliced Jalapeño (optional)
  • 2 chopped Green onions (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Step 2

Slice the russet potatoes into thin fries, about 1/4 inch thick. Place them in a large bowl.

Drizzle olive oil over the potatoes. Sprinkle paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Toss to coat evenly.
