  • 1 cup Chickpea flour (Besan)
  • 0.5 cup Coconut oil
  • 0.5 cup Coconut milk
  • 1 cup Sugar
  • 0.25 cup Water
  • 0.25 teaspoon Cardamom powder
  • 0.25 teaspoon Baking soda

Directions

Step 1

Grease a square or rectangular pan with a little coconut oil and set it aside.

Step 2

In a heavy-bottomed pan, add half a cup of coconut oil and let it melt over low heat.

Step 3

Add chickpea flour (besan) to the melted coconut oil, stirring continuously to roast the flour. Roast until the flour turns golden brown and fragrant. This should take about 6-8 minutes. Make sure there are no lumps when mixing.

Step 4

Once roasted, remove the pan from heat and set aside.

In another pan, combine sugar and water. Cook over medium heat until the sugar dissolves completely and the syrup reaches a one-string consistency (when a drop is placed between your thumb and forefinger, it should form a single thread when pulled apart).

To the sugar syrup, add coconut milk and cardamom powder, and mix well.

Return the roasted chickpea flour mixture to the heat, and carefully integrate the sugar syrup mixture into it, stirring continuously to avoid lumps.

Add baking soda and continue stirring until the mixture starts leaving the sides of the pan and thickens. This indicates that it is starting to set.

Step 9

Pour the hot mixture into the greased pan, spreading it evenly. Tap the pan gently on the countertop to remove any air bubbles.

Step 10

Let it cool slightly, about 15 minutes, and then cut into squares or diamonds before it sets completely.

Allow to cool completely before serving or storing.
