Ingredients

  • 14 oz firm tofu
  • 3 tbsp cornstarch
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 0.25 cup water
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 1 cup carrots, julienned
  • 4 green onions, sliced
  • 1 tbsp sesame seeds
  • 4 cups cooked rice

Directions

Step 1

Drain and press the tofu to remove excess moisture. Cut into 1-inch cubes.

Step 2

In a large bowl, toss the tofu cubes with cornstarch until evenly coated.

Step 3

In a small bowl, whisk together the soy sauce, brown sugar, water, minced ginger, and minced garlic. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the tofu and cook until golden and crispy on all sides, about 8 minutes. Remove tofu from the skillet and set aside.

Step 5

In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the sliced bell pepper, broccoli, and julienned carrots. Stir-fry for about 5 minutes, or until vegetables are tender-crisp.

Step 6

Return the tofu to the skillet with the vegetables.

Step 7

Pour the soy sauce mixture over the tofu and vegetables. Stir well to ensure everything is coated with the sauce. Cook for another 2-3 minutes until the sauce is slightly thickened.

Step 8

Garnish with sliced green onions and sesame seeds.

Step 9

Serve the stir fry hot over cooked rice.
