Ingredients

  • 2 cups Black-eyed peas
  • 2 large Red bell peppers
  • 2 medium Roma tomatoes
  • 1 large Onion
  • 1 small Scotch bonnet pepper (optional)
  • 2 large Garlic cloves
  • 0.25 cup Vegetable oil
  • 1.5 cups Vegetable broth
  • 2 teaspoons Salt
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Nutritional yeast
  • 10 pieces Foil or banana leaves

Directions

Step 1

Rinse 2 cups of black-eyed peas in water. Soak them for at least an hour or overnight to soften and easily remove the skins.

Step 2

Rub the soaked peas between your palms to remove their skins. Rinse and drain until most of the skins are removed, adding more water as necessary.

Step 3

In a blender, combine 2 large red bell peppers (seeded), 2 medium Roma tomatoes, 1 large onion, 1 small scotch bonnet pepper (if using), and 2 large garlic cloves. Blend until smooth.

Step 4

Add the cleaned beans to the blender with the mixed vegetables, and blend until you get a smooth, thick paste. You may need to do this in batches.

Step 5

Transfer the bean mixture to a large mixing bowl. Add 0.25 cup of vegetable oil, 1.5 cups of vegetable broth, 2 teaspoons of salt, 1 teaspoon of smoked paprika, and 2 tablespoons of nutritional yeast. Mix well until fully combined.

Step 6

If using banana leaves, wash them thoroughly and wilt over a low flame until pliable. If using foil, simply cut into large squares.

Spoon portions of the bean mixture onto each piece of banana leaf or foil. Fold tightly to enclose the pudding mixture.

In a large pot, add enough water to create steam but not submerge the Moi Moi packages. Use a steamer basket or a layer of foil at the base to lift the parcels above the water line.

Arrange the wrapped bean puddings in the pot. Cover the pot and steam over medium heat for about 60 minutes, checking occasionally and adding more water as needed to prevent burning.
