Ingredients

  • 200 grams Glutinous rice flour
  • 50 grams Almond flour
  • 2 teaspoons Baking powder
  • 60 grams Granulated sugar
  • 0.5 teaspoons Salt
  • 200 milliliters Coconut milk
  • 1 teaspoons Vanilla extract
  • 500 milliliters Vegetable oil (for frying)

Directions

Step 1

In a large bowl, whisk together glutinous rice flour, almond flour, baking powder, sugar, and salt until they are well mixed.

Step 2

In a separate bowl, mix coconut milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.

Step 3

Knead the dough in the bowl for a minute until it comes together and is smooth. If it's too sticky, you can add a small amount of glutinous rice flour.

Step 4

Divide the dough into 6 equal portions. Roll each portion into a long rope about 1 to 1.5 cm thick and then shape them into rings by pressing the ends together.

Heat vegetable oil in a deep saucepan over medium heat until it reaches 170°C (340°F). To check the oil's readiness, drop a small piece of dough into the oil; it should rise to the surface bubbling.

Step 6

Gently lower one or two mochi rings into the hot oil (don’t overcrowd the pan) and fry for about 2-3 minutes on each side or until golden brown and cooked through.

Step 7

Use a slotted spoon to carefully remove the donuts from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 8

Repeat the frying process with the remaining donut rings.

Step 9

Allow the donuts to cool slightly before serving. Optionally, you can dust them with powdered sugar or glaze them with your favorite vegan glaze.
