Ingredients

  • 8 cups Mixed salad greens
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 large Avocado
  • 0.5 cup Fresh parsley
  • 1 large Lemon
  • 0.25 cup Olive oil
  • 1 tablespoon Maple syrup
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and pat dry the mixed salad greens. Place them in a large salad bowl.

Step 2

Wash the cherry tomatoes and slice them in half. Add the tomatoes to the salad bowl.

Step 3

Peel the cucumber if desired, then cut it into thin slices. Add to the bowl.
