Ingredients

  • 2 sheets Vegan puff pastry sheets
  • 1 cup Fresh strawberries
  • 0.5 cup Blueberries
  • 2 Kiwi
  • 1 Mango
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 2 tablespoons Almond milk
  • 2 tablespoons Confectioners' sugar

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the vegan puff pastry sheets if frozen and roll them out slightly on a floured surface to smoothen any creases.

Step 3

Wash and hull the strawberries, then slice them into thin pieces. Peel and dice the kiwi and mango into small cubes.

Step 4

In a medium bowl, combine the sliced strawberries, blueberries, kiwis, and mango. Add the granulated sugar, cornstarch, and lemon juice. Mix gently to combine.

Step 5

Cut the puff pastry sheets into squares, approximately 4x4 inches each.

Step 6

Spoon about 1 to 2 tablespoons of the fruit mixture into the center of each square.

Step 7

Fold the corners of the puff pastry squares towards the center, pinching them together to form a seal around the filling.

Step 8

Brush the tops of the pastries with almond milk to help with browning.

Step 9

Place the fruit-filled pastries onto the prepared baking sheet, ensuring they are well spaced.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed up.

Step 11

Remove from oven and allow to cool slightly.

Step 12

Before serving, dust with confectioners' sugar for a sweet touch.
