Ingredients

  • 240 grams all-purpose flour
  • 50 grams cane sugar
  • 1 teaspoon salt
  • 115 grams cold vegan butter
  • 3 tablespoons cold water
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 150 grams fresh strawberries, hulled and chopped
  • 150 grams fresh blueberries
  • 150 grams fresh raspberries
  • 50 milliliters maple syrup
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a large bowl, combine the flour, sugar, and salt. Mix well.

Step 3

Add the cold vegan butter into the flour mixture. Use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.

Step 4

Gradually add the cold water, tablespoon by tablespoon, mixing until the dough starts to come together. Form the dough into a ball.

Wrap the dough in plastic wrap and refrigerate for 15 minutes.

While the dough chills, prepare the filling. Combine cornstarch and lemon juice in a small bowl to make a slurry.

In a medium saucepan over medium heat, add strawberries, blueberries, raspberries, and maple syrup. Cook for about 5-7 minutes, stirring occasionally, until the berries soften and release juices.

Pour the berry filling into the cooled crust, spreading it evenly.

Return the tart to the oven and bake for an additional 25 minutes.
