Preheat the oven to 180°C (350°F).
In a large bowl, combine the flour, sugar, and salt. Mix well.
Add the cold vegan butter into the flour mixture. Use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
Gradually add the cold water, tablespoon by tablespoon, mixing until the dough starts to come together. Form the dough into a ball.
Wrap the dough in plastic wrap and refrigerate for 15 minutes.
While the dough chills, prepare the filling. Combine cornstarch and lemon juice in a small bowl to make a slurry.
In a medium saucepan over medium heat, add strawberries, blueberries, raspberries, and maple syrup. Cook for about 5-7 minutes, stirring occasionally, until the berries soften and release juices.

On a lightly floured surface, roll the chilled dough into a circle approximately 30 cm (12 inches) in diameter.
Transfer the rolled-out dough to a 23 cm (9-inch) tart pan, pressing it into the bottom and sides. Trim any excess dough.
Prick the dough with a fork all over to prevent it from rising and bake it in the preheated oven for 15 minutes or until lightly golden.
Remove the crust from the oven and allow it to cool slightly.
Pour the berry filling into the cooled crust, spreading it evenly.
Return the tart to the oven and bake for an additional 25 minutes.
