Ingredients

  • 8 pieces Mini flour tortillas
  • 1 cup Cooked black beans
  • 1 large Avocado
  • 10 pieces Cherry tomatoes
  • 0.5 cup Red onion
  • 0.25 cup Fresh cilantro
  • 1 whole Lime
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Spinach leaves

Directions

Step 1

Start by preparing the filling: Drain and rinse the black beans, and place them in a medium bowl.

Step 2

Cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado into small cubes and add to the bowl with the beans.

Slice the cherry tomatoes into halves or quarters, depending on their size, and add to the bowl.

Finely dice the red onion and chop the cilantro, then add both to the mixture in the bowl.
