  • 12 pieces mini corn tortillas
  • 1 cup canned black beans
  • 1 medium avocado
  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 0.5 medium red bell pepper
  • 0.25 cup fresh cilantro
  • 1 medium lime
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup vegan sour cream

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Wrap the mini corn tortillas in foil and warm in the preheated oven for about 5-7 minutes.

Meanwhile, drain and rinse the black beans. Place them in a bowl and mash slightly with a fork, leaving some beans whole.
