Ingredients

  • 3 medium potatoes
  • 1 cup frozen peas
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 minced garlic cloves
  • 1 teaspoon ginger
  • 1 minced green chili
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 sheets vegan puff pastry sheets
  • 2 tablespoons olive oil

Directions

Step 1

Boil the potatoes until they are fully cooked and tender. Drain and let them cool, then peel and mash them lightly.

Step 2

Heat olive oil in a pan over medium heat. Add cumin and mustard seeds and allow them to sputter.

Step 3

Add the minced garlic, ginger, and green chili. Sauté for about a minute, until fragrant.

Step 4

Add the turmeric, coriander powder, garam masala, and salt to the pan. Mix well.

Add the frozen peas to the pan and cook for about 2 minutes until they are heated through.

Add the mashed potatoes to the pan and stir to combine everything evenly. Cook for another 3-4 minutes, then remove from heat and allow the filling to cool.

Preheat your oven to 400°F (200°C).

Roll out the vegan puff pastry sheets on a lightly floured surface to make them thinner.
