Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 0.5 cup water
  • 2 medium, finely chopped onions
  • 2 finely chopped green chilies
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon garam masala
  • 0.25 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon lemon juice
  • 2 tablespoons, finely chopped cilantro
  • 2 tablespoons (for the filling) oil
  • 0 amount for frying oil

Directions

Step 1

In a bowl, mix together all-purpose flour, whole wheat flour, salt, and 2 tablespoons of oil. Gradually add water and knead into a firm dough. Cover and let it rest for about 20 minutes.

Step 2

Heat 2 tablespoons of oil in a pan over medium heat. Add cumin seeds and fennel seeds and let them crackle.

Step 3

Add finely chopped onions and green chilies. Sauté until the onions are translucent.

Step 4

Stir in red chili powder, garam masala, turmeric powder, and coriander powder. Cook for another minute.

Step 5

Add lemon juice and chopped cilantro. Mix well and turn off the heat. Let the filling cool completely.

Divide the dough into 12 equal portions. Roll each portion into a small ball, then roll out into a thin oval shape. Cut the oval in half to create two semi-circles.

Take one semi-circle, fold it into a cone shape, and seal the edge with a little water. Fill the cone with about 1 tablespoon of onion filling.

Seal the open edges of the cone to form a triangular samosa, using a little water to help seal.

Step 9

Repeat the process for the remaining dough and filling.

Step 10

Heat oil in a deep frying pan over medium heat. Once the oil is hot but not smoking, deep-fry the samosas in batches until golden brown and crispy.

Step 11

Drain on paper towels and let them cool slightly before serving.
