Ingredients

  • 1 cup unsweetened shredded coconut
  • 0.5 cup coconut cream
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup vegan dark chocolate chips
  • 1 tablespoon coconut oil
  • 20 pieces whole almonds

Directions

Step 1

In a medium bowl, mix together the unsweetened shredded coconut, coconut cream, maple syrup, and vanilla extract until well combined. The mixture should be sticky enough to hold together.

Step 2

Line a baking sheet with parchment paper. Take small tablespoons of the coconut mixture and roll them into tight balls between your palms, then slightly flatten them into disk shapes. Place them onto the prepared baking sheet.

Step 3

Gently press one whole almond onto the top of each coconut disk.

Step 4

Place the baking sheet in the refrigerator for about 10 minutes to help the coconut disks firm up.

Step 5

In a double boiler or a heatproof bowl set over a pot of simmering water, melt the vegan dark chocolate chips and coconut oil together, stirring until smooth.

Step 6

Remove the coconut discs from the refrigerator. Using a fork, dip each coconut disk into the melted chocolate until fully coated, allowing the excess chocolate to drip off before placing it back on the parchment-lined baking sheet.

Step 7

Place the chocolate-covered bites back into the refrigerator for about 15 minutes or until the chocolate is fully set.

Step 8

Serve chilled and store any leftovers in an airtight container in the refrigerator.
