Preheat your oven to 180°C (350°F).
In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Add the vegan butter and rub the mixture with your fingers until it resembles coarse crumbs.
Press the dough into the base and sides of a 23 cm (9-inch) tart pan evenly. Prick the base with a fork to prevent bubbling, then bake in the preheated oven for 15 minutes until lightly golden. Remove from oven and set aside to cool.
In a saucepan, pour 400 milliliters of the almond milk and bring to a gentle simmer over medium heat.
In a separate bowl, whisk together the remaining 100 milliliters of the almond milk with cornstarch until smooth. Add this mixture to the simmering almond milk.
Add granulated sugar, vanilla extract, and turmeric while continuously whisking to prevent lumps from forming. Cook for about 10 minutes until the mixture thickens, stirring constantly.
Once the filling is thickened, pour it into the pre-baked tart shell, spreading evenly.
Sprinkle ground cinnamon over the top of the filling for that characteristic milk tart finish.
Allow the tart to cool to room temperature, then refrigerate for at least 2 hours to set completely before serving.
