Ingredients

  • 4 pieces Large flour tortillas
  • 2 tablespoons Olive oil
  • 1 cup Refried black beans (vegan)
  • 1 cup Vegan shredded cheese (cheddar or Mexican blend)
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Red onion, thinly sliced
  • 0.5 cup Corn kernels (fresh, canned, or frozen)
  • 0.25 cup Cilantro, chopped
  • 1 medium Avocado, sliced or diced
  • 1 small Jalapeño, thinly sliced (optional)
  • 1 medium Lime, cut into wedges
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Lightly brush both sides of each tortilla with olive oil and place them on baking sheets.

Toast the tortillas in the oven for 5 minutes, flipping halfway through, until they are crispy and lightly golden.
