  • 3 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 0.75 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 yellow onion, finely diced
  • 1 carrot, finely grated
  • 1 celery stalk, finely chopped
  • 0.5 cups breadcrumbs
  • 0.25 cups ketchup (for topping)
  • 1 tablespoons brown sugar
  • 1 teaspoons Dijon mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it with oil.

In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, onion powder, garlic powder, smoked paprika, and ground sage. Mix well.

In a smaller bowl, whisk together the soy sauce, tomato paste, and vegetable broth until smooth. Set aside.

Heat olive oil in a skillet over medium heat. Add the diced onion, grated carrot, and chopped celery. Sauté for 5–7 minutes until softened. Let this mixture cool slightly.
