Ingredients

  • 12 sheets lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 12 ounces vegan ground meat
  • 4 cups marinara sauce
  • 4 cups baby spinach, chopped
  • 1.5 cups vegan ricotta cheese
  • 2 cups vegan mozzarella cheese, shredded
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil and cook the lasagna noodles according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and cook for another minute.

Add the vegan ground meat to the skillet and cook for 5-7 minutes until browned and heated through. Stir in 3 cups of marinara sauce, Italian seasoning, salt, and black pepper. Reduce heat and let simmer for 5 minutes.
