  • 4 Tortillas (large, whole wheat preferred)
  • 1 Red bell pepper
  • 1 Cucumber
  • 2 cups Mixed salad greens
  • 0.5 cup Vegan mayonnaise
  • 2 small peppers Chipotle peppers in adobo sauce
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Avocado

Directions

Step 1

Press the tofu to remove excess moisture. Wrap it in a clean kitchen towel, place a heavy object (like a skillet) on top, and let it sit for 15 minutes.

Step 2

While the tofu presses, prepare the marinade by whisking together the soy sauce, maple syrup, smoked paprika, garlic powder, and 1 tablespoon of olive oil in a shallow dish.

Slice the pressed tofu into 1/4-inch thick rectangles. Add the tofu slices to the marinade, turning to coat evenly. Let them marinate for at least 10 minutes, flipping once halfway through.
