Ingredients

  • 100 grams sago pearls
  • 2 large ripe mangoes
  • 400 milliliters coconut milk
  • 2 tablespoons coconut sugar
  • 750 milliliters water
  • 5 leaves mint leaves
  • 1 teaspoon lime zest
  • 1 pinch salt

Directions

Step 1

Begin by rinsing the sago pearls under cold water to remove excess starch.

Step 2

In a medium saucepan, bring 750 milliliters of water to a boil and add the sago pearls.

Step 3

Stir the sago occasionally to prevent sticking, cooking for about 15 minutes until they turn translucent.

Step 4

Once cooked, drain the sago in a fine mesh strainer and rinse under cold water to stop the cooking process. Set aside.

Step 5

Peel and dice the mangoes. Reserve some mango cubes for garnish and puree the rest in a blender until smooth.

Step 6

In a separate saucepan, combine 400 milliliters of coconut milk, 2 tablespoons of coconut sugar, lime zest, and a pinch of salt.

Gently heat the coconut milk mixture over low heat, stirring until the sugar dissolves completely. Do not bring it to a boil.

Remove from heat and stir in the mango puree, mixing well.

Add the cooked and cooled sago pearls into the mango-coconut mixture, and stir until evenly distributed.
