Ingredients

  • 2 teaspoons Black tea leaves
  • 240 ml Boiling water
  • 100 grams Mango puree
  • 150 ml Unsweetened almond milk
  • 50 grams Tapioca pearls
  • 25 grams Brown sugar
  • 5 count Ice cubes
  • 3 pieces Mango slices (for garnish)

Directions

Step 1

In a saucepan, bring 240 ml of water to a boil. Add 2 teaspoons of black tea leaves and steep for 5 minutes. Strain the tea into a pitcher and let it cool to room temperature.

Step 2

While the tea is cooling, prepare the tapioca pearls. Bring another small pot of water to a boil and add 50 grams of tapioca pearls. Cook according to package instructions, usually around 10-15 minutes, until they become soft and chewy. Drain and rinse with cold water to prevent sticking.

Step 3

In the same saucepan, add 25 grams of brown sugar to the cooked tapioca pearls. Stir on low heat until the sugar is melted and coats the pearls evenly. Remove from heat and set aside.

Step 4

In a blender, combine 100 grams of mango puree with 150 ml of unsweetened almond milk. Blend until smooth and creamy.

Step 5

Fill two glasses with the ice cubes. Divide the cooled black tea evenly between the two glasses.

Step 6

To each glass, add an equal portion of the sugar-coated tapioca pearls.

Step 7

Pour the mango-almond milk mixture over the tapioca pearls and black tea, distributing it evenly.

Step 8

Gently stir each glass to combine all ingredients.

Step 9

Garnish with fresh mango slices on top, and serve immediately with a wide straw to enjoy the tapioca pearls.
