Begin by preparing the vegan condensed milk. Take a small saucepan and add the canned coconut milk, 1 tablespoon of agave syrup, and vanilla extract. Heat the mixture over medium heat while stirring to ensure it doesn’t burn.
Mix cornflour with water until smooth in a separate small bowl, then add this to the saucepan. Continue heating while stirring continuously until the mixture thickens—this should take about 5 to 7 minutes. Set aside to cool.
Next, make the ice base. Soak cashew nuts in 250 ml of almond milk for 30 minutes to soften them.
After soaking, blend the cashew nuts and almond milk mixture with 1 tablespoon of sugar until it is smooth and creamy.
Pour this mixture into an ice cube tray and freeze until solid, preferably overnight for the best results.
When you're ready to serve, peel and cut the mangoes into small cubes.
