Directions

Step 1

Begin by preparing the vegan condensed milk. Take a small saucepan and add the canned coconut milk, 1 tablespoon of agave syrup, and vanilla extract. Heat the mixture over medium heat while stirring to ensure it doesn’t burn.

Mix cornflour with water until smooth in a separate small bowl, then add this to the saucepan. Continue heating while stirring continuously until the mixture thickens—this should take about 5 to 7 minutes. Set aside to cool.

Next, make the ice base. Soak cashew nuts in 250 ml of almond milk for 30 minutes to soften them.
