Ingredients

  • 2 cups Rolled oats
  • 1 cup Almond flour
  • 0.5 cup Coconut oil
  • 0.5 cup Maple syrup
  • 0.5 teaspoon Salt
  • 2 cups Fresh mango, cubed
  • 0.5 cup Coconut milk
  • 3 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Lemon juice
  • 2 tablespoons Agave syrup

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Line an 8x8 inch baking pan with parchment paper, leaving excess hanging over the sides for easy removal later.

Step 3

In a food processor, blend the rolled oats until they reach a coarse flour-like consistency.

Step 4

Add the almond flour, melted coconut oil, maple syrup, and salt to the food processor. Blend until the ingredients form a crumbly dough.

Step 5

Press the dough evenly into the bottom of the prepared baking pan to form the crust. Use the flat bottom of a measuring cup to press it firmly.

Bake the crust for 10-12 minutes, until lightly golden. Remove from the oven and let it cool while preparing the filling.

In a blender, combine the mango cubes, coconut milk, cornstarch, vanilla extract, lemon juice, and agave syrup. Blend until smooth and creamy.
