Ingredients

  • 1 cup Toor dal (split pigeon peas)
  • 3 cups Water
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 1 tablespoon Tamarind paste
  • 1 tablespoon Jaggery (or brown sugar)
  • 0.5 cup Coconut milk
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.25 teaspoon Asafoetida (hing)
  • 2 Dried red chilies
  • 10 Curry leaves
  • 2 Green chilies
  • 2 tablespoons Finely chopped coriander leaves
  • 2 tablespoons Oil

Directions

Step 1

Rinse the toor dal thoroughly under cold water until the water runs clear.

Step 2

In a medium saucepan, combine the rinsed toor dal, 3 cups of water, and turmeric powder. Bring to a boil over medium heat.

Step 3

Reduce the heat to low, cover the saucepan, and simmer for about 20 minutes or until the dal is tender and cooked through.

Step 4

While the dal is cooking, heat oil in a small pan over medium heat. Add mustard seeds and cumin seeds, and allow them to splutter.

Step 5

Add asafoetida, dried red chilies, curry leaves, and slit green chilies to the pan. Sauté for a minute until fragrant.

Step 6

Once the dal is cooked, mash it slightly with the back of a spoon or a whisk for a smooth consistency.

Step 7

Add tamarind paste, jaggery, and salt to the dal. Mix well and simmer for another 5 minutes.

Step 8

Stir in the coconut milk and the tempered spice mixture from the small pan into the dal. Mix thoroughly.

Step 9

Simmer the aamti for an additional 5 minutes, allowing all the flavors to meld together. Adjust salt to taste.

Step 10

Garnish with finely chopped coriander leaves and serve hot with steamed rice or roti.
