Ingredients

  • 200 grams Unsweetened shredded coconut
  • 60 grams Almond flour
  • 80 milliliters Maple syrup
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 100 grams Dark chocolate (vegan), optional for dipping

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine the shredded coconut, almond flour, and a pinch of salt. Mix well to evenly distribute the dry ingredients.

Step 3

In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in the maple syrup and vanilla extract.

Step 4

Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is fully combined and holds together when pressed.

Step 5

Using a tablespoon or a small cookie scoop, form tight, dome-shaped mounds of the mixture and place them on the prepared baking sheet.
