Ingredients

  • 250 grams Vegan macaroni pasta
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 400 grams Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 10 grams, chopped Fresh basil
  • 2 tablespoons Nutritional yeast
  • as needed Water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the vegan macaroni pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat olive oil in a large saucepan over medium heat.

Step 3

Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.

Step 4

Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

Step 5

Stir in the crushed tomatoes and tomato paste, mixing well.

Step 6

Add dried oregano, dried basil, red pepper flakes, salt, black pepper, and sugar to the sauce. Stir to combine.

Reduce the heat to low and simmer the sauce for about 15-20 minutes, allowing the flavors to blend. Stir occasionally and add a small amount of water if the sauce becomes too thick.

Once the sauce has simmered, taste and adjust seasoning as necessary.

Stir in the cooked macaroni pasta and mix until the pasta is well coated with the tomato sauce.

Remove from heat and stir in the fresh basil and nutritional yeast.
