Ingredients

  • 1 cup almond flour
  • 0.25 cup unsweetened cocoa powder
  • 0.25 cup coconut oil
  • 0.25 cup maple syrup (or low-carb syrup alternative)
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 0.25 cup desiccated coconut
  • 0.25 teaspoon sea salt

Directions

Step 1

In a medium-sized mixing bowl, combine the almond flour, unsweetened cocoa powder, and sea salt. Stir well to ensure the cocoa powder is evenly distributed.

Step 2

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and add the maple syrup and vanilla extract. Stir until well combined.

Step 3

Pour the wet mixture into the dry ingredients, stirring with a spatula until a sticky dough forms.

Step 4

Add the chia seeds to the mixture and continue to stir until evenly distributed.

Step 5

Line a baking sheet with parchment paper. Using your hands, shape the dough into 1-inch balls, and roll each ball in the desiccated coconut to coat.

Step 6

Place the chocolate balls onto the prepared baking sheet. Refrigerate for at least 1 hour to firm up before serving.

Step 7

Store the chocolate balls in an airtight container in the fridge for up to a week or in the freezer for up to a month.
