Ingredients

  • 500 grams Bottle gourd (lauki/dudhi)
  • 2 tablespoons Coconut oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Mustard seeds
  • 1 medium Onion, finely chopped
  • 3 pieces Garlic cloves, minced
  • 1 inch Ginger, grated
  • 1 pieces Green chili, finely chopped
  • 2 medium Tomatoes, finely chopped
  • 2 teaspoons Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Fresh coriander leaves, chopped

Directions

Step 1

Peel the bottle gourd, cut it into small cubes and set aside.

Step 2

Heat the coconut oil in a large pan over medium heat. Add the cumin seeds and mustard seeds, and allow them to splutter.

Step 3

Add the chopped onions and sauté until they become translucent.

Step 4

Stir in the minced garlic, grated ginger, and chopped green chili. Sauté for another 2-3 minutes until fragrant.

Step 5

Add the chopped tomatoes and cook until they become soft and mushy.

Step 6

Stir in the coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 1-2 minutes.

Add the cubed bottle gourd and mix everything thoroughly, ensuring the pieces are coated with the spice mixture.

Pour in the water and bring the mixture to a boil. Cover the pan and let it simmer on low heat for about 15-20 minutes or until the bottle gourd is tender.

Once the bottle gourd is fully cooked, add the garam masala and mix well.
