Ingredients

  • 2 cups Whole wheat flour
  • 0.75 cup Lukewarm water
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Nigella seeds (optional)
  • 2 tablespoons Mustard oil
  • 1 cup Roasted gram flour (sattu)
  • 1 tablespoon Pickle masala
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin seeds
  • 2 tablespoons Lemon juice
  • 2 pieces Green chillies, finely chopped
  • 2 tablespoons Fresh coriander leaves, chopped
  • 1 piece Brinjal (eggplant), medium
  • 2 pieces Tomatoes, medium
  • 2 pieces Potatoes, medium
  • 4 pieces Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 medium Onion, finely chopped

Directions

Step 1

To make the littis, combine whole wheat flour, salt, baking soda, and nigella seeds in a mixing bowl. Add 1 tablespoon of mustard oil and mix well.

Step 2

Gradually add lukewarm water to the flour mixture and knead into a smooth dough. Cover the dough with a damp cloth and set aside.

Step 3

For the filling, in another bowl, mix roasted gram flour, pickle masala, coriander powder, cumin seeds, lemon juice, half of the chopped green chilies, and coriander leaves.

Step 4

Divide the dough into equal portions and flatten each piece. Place a spoonful of filling in the center, gather the edges, and seal to form a ball.

Step 5

Preheat your oven to 375°F (190°C). Arrange the littis on a baking tray and bake for 25-30 minutes, turning halfway through, until golden brown.

Step 6

For the chokha, roast the whole brinjal, tomatoes, and potatoes directly over an open flame or in the oven until blistered and soft.

Step 7

Peel off the charred skin from the vegetables. Mash the brinjal, tomatoes, and potatoes together in a bowl.

Step 8

Add minced garlic, ginger, remaining green chilies, turmeric powder, red chili powder, and chopped onion to the mashed vegetables. Mix well.

Step 9

Heat the remaining mustard oil in a pan and pour it over the chokha for extra flavor.

Step 10

Serve the littis hot with a side of chokha, garnished with chopped coriander leaves.
