Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup parsley, chopped
  • 0.25 cup dill, chopped
  • 0.25 cup mint leaves, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons capers, drained and rinsed
  • 2 tablespoons pine nuts, toasted

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until soft and translucent.

Stir in the minced garlic and sauté for another 30 seconds until fragrant.

Add the rinsed rice to the pot, stirring well to coat it with the oil, onion, and garlic mixture.
