Ingredients

  • 1 cup Textured vegetable protein (TVP)
  • 1 cup Boiling water
  • 1 cup Chickpeas, cooked and drained
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 teaspoons Ground cumin
  • 2 teaspoons Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground allspice
  • 1 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Fresh mint, chopped
  • 2 tablespoons Olive oil
  • 0.25 cup All-purpose flour
  • 8 pieces Wooden skewers

Directions

Step 1

In a heatproof bowl, combine the textured vegetable protein (TVP) and boiling water. Stir well and let it sit for 10 minutes until rehydrated.

Step 2

While the TVP is soaking, place the chickpeas in a food processor and blend until smooth.

Step 3

In a large mixing bowl, combine the rehydrated TVP, blended chickpeas, chopped onion, garlic, ground cumin, ground coriander, ground cinnamon, ground allspice, paprika, cayenne pepper, salt, black pepper, fresh parsley, and fresh mint.

Step 4

Mix everything thoroughly until well combined. Add olive oil and mix again.

Step 5

Gradually add the flour, mixing it in to bind the mixture together. If it feels too wet, add a little more flour.

Step 6

Preheat your grill or grill pan to medium-high heat.

Divide the mixture into 8 equal portions. Shape each portion around a wooden skewer to form oval koftas, about 4 inches long and 1 inch thick.

Step 8

Lightly coat the grill or grill pan with a bit of olive oil to prevent sticking.

Step 9

Grill the koftas for about 5-7 minutes on each side, or until they are browned and cooked through.

Step 10

Serve the koftas hot, garnished with additional parsley and mint, alongside your favorite vegan yogurt or tahini sauce.
