Ingredients

  • 400 g seitan
  • 2 tbsp olive oil
  • 1 large onion
  • 4 garlic cloves
  • 2 carrot
  • 3 potato
  • 1 green bell pepper
  • 500 ml vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 tbsp soy sauce
  • 2 tbsp tomato paste
  • 100 ml white wine
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 tbsp chopped parsley

Directions

Step 1

Slice the seitan into thick strips, approximately 1 inch wide.

Step 2

In a large pot, heat the olive oil over medium heat.

Step 3

Chop the onion and garlic. Add them to the pot and sauté for around 3-4 minutes until the onion becomes translucent.

Chop the carrots into thick slices and the potatoes into large chunks. Dice the green bell pepper.

Add the carrots, potatoes, and bell pepper to the pot and stir with the onion and garlic.

Pour in the vegetable broth, followed by the bay leaves, dried thyme, and soy sauce. Stir well to combine all the ingredients.
