Ingredients

  • 1 can (15 oz), drained and rinsed chickpeas
  • 200 grams, finely chopped button mushrooms
  • 1 medium, finely grated onion
  • 3 minced garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons, finely chopped fresh parsley
  • 0.5 cup bread crumbs
  • 2 tablespoons ground flaxseeds
  • 5 tablespoons water
  • 2 tablespoons olive oil

Directions

Step 1

In a small bowl, combine the ground flaxseeds with water and set aside for 5 minutes to thicken.

Step 2

In a food processor, add the drained chickpeas, and pulse a few times until coarsely mashed.

Step 3

Add the finely chopped mushrooms, grated onion, minced garlic, ground cumin, ground coriander, smoked paprika, salt, ground black pepper, lemon juice, fresh parsley, and bread crumbs to the food processor.

Step 4

Pour in the soaked flaxseed mixture and pulse again until the mixture is well combined but still slightly chunky.

Step 5

Transfer the mixture into a mixing bowl and shape into thick long patties or logs using your hands. If necessary, wet your hands to prevent sticking.

Heat olive oil in a non-stick pan over medium heat.

Step 7

Carefully place the kebab patties in the pan and cook for about 6-8 minutes on each side, or until golden brown and firm.
