  • 300 grams, quartered Mushrooms
  • 500 grams, peeled and cubed Potatoes
  • 3 cloves, minced Garlic
  • 1 liter Vegetable broth
  • 2 pieces Bay leaves
  • 1 teaspoon, dried Thyme
  • 0.5 teaspoon, ground Allspice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 100 grams Dried soy protein chunks
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add diced onion and sauté for about 5 minutes until translucent.

Step 3

Stir in sliced carrots, parsnips, and quartered mushrooms. Sauté for another 5 minutes.

Step 4

Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Pour in the vegetable broth and add bay leaves, thyme, allspice, salt, and black pepper. Stir well.
