Ingredients

  • 250 grams Raw cashew nuts
  • 60 milliliters Coconut milk
  • 100 grams Coconut sugar
  • 1 teaspoon Rose water
  • 1 teaspoon Cardamom powder
  • 1 teaspoon Vegan butter or coconut oil

Directions

Step 1

Place the raw cashew nuts in a blender or food processor and pulse until they turn into a fine powder. Be careful not to blend too much to prevent the cashews from releasing their oils and turning into a paste.

Step 2

In a non-stick pan over medium heat, add the coconut milk and coconut sugar. Stir continuously until the sugar is completely dissolved and the mixture comes to a gentle boil.

Step 3

Reduce the heat to low and add the cardamom powder and rose water to the mixture. Stir well to combine.

Step 4

Gradually add the cashew powder to the coconut milk mixture. Stir continuously to avoid any lumps and continue cooking on low heat.

Step 5

Keep stirring the mixture until it begins to thicken and comes away from the sides of the pan, forming a soft dough-like consistency. This should take about 10-15 minutes.

Step 6

Once the desired consistency is achieved, turn off the heat and add the vegan butter or coconut oil. Mix well until incorporated.

Step 7

Transfer the mixture onto a sheet of parchment paper and allow it to cool slightly until it is easy to handle.

Place another piece of parchment paper on top and use a rolling pin to evenly flatten the dough to about 1/4-inch thick.

Once flattened, use a sharp knife to cut the dough into diamond-shaped pieces.

Allow the kaju katli to cool completely. Store in an airtight container for up to a week.
