  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 50 grams raisins
  • 15 grams powdered sugar
  • 2 tablespoons vegan butter
  • 1 teaspoon lemon zest
  • 60 grams applesauce

Directions

Step 1

In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Whisk well to combine.

In a separate bowl, mix the almond milk, vanilla extract, and applesauce. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.

In a clean bowl, whisk the aquafaba until it forms stiff peaks. This will take about 6-8 minutes with an electric mixer.
